Raspberry biscuit sundae |

Ingredients :
1 pack pink wafer biscuits
400g raspberries
150g white chocolate
125g mascarpone
50g de fromage blanc
2 egg white
Raspberry ice cream
Recipe :
Melt the white chocolate in a bain-marie. Remove from the heat, mix with the mascarpone and cottage cheese. Whip the egg whites into firm peaks then add gently to the chocolate and mascarpone mix. Set aside until serving.
Crumble the wafer biscuits very lightly. Place a little ice cream in each ramekin, add half the crumbled biscuit, half the raspberries, the white chocolate mousse, the rest of the raspberries and biscuits. Serve immediately.
