Ingredients :
1 shortcrust pastry
500ml milk
5 egg yolks
50g sugar
80g almond powder
1 vanilla pod
vanilla or bitter almond extract (optional)
salt
Recipe :
Mix the egg yolks with the sugar until the mixture becomes smooth.
Bring the milk to the boil and add the vanilla pod to it. Once it starts bubbling, remove from the heat and leave it to cool down.
Take out the vanilla pod and mix it with the first mixture.
Place it all together over a low heat then add the almond powder and a pinch of salt.
Line a dish with the shortcrust pastry. Once the mixtures is brought to the boil, pour into the dish.
Prehear the oven to 180°C (Gas Mark 6) then cook for 35 minutes.
