Curry sauce (basic)

Ingredients :
Onions (2 Medium sized diced)
Tomatoes (2 diced)
Ginger/garlic paste
salt to taste
Tomato Paste (1 Tbspn)
1-2 tablespns veg/sunf oil
Green peppers (optional) (1 small/Medium chopped)
Curry powder 1-1.5 tspn or the following spices:
Corriander Powder (1 tspn)
Cumin Powder (1 tspn)
Tumeric Powder (qtr/half tspn
Paprika powder (1 tspn)
Chilli Powder (optional)(half tspn, if like it hot 1-1.5 tspn)
Fresh corriander leaves to garnish
 
Recipe :
1-heat oil in pan and fry the onions until golden brown.

2- add the tomatoes and cook for further 3-4mins, then add the ginger/garlic paste

3-Add the tomato paste stir well and then add all the spices and the green peppers & salt. stir all ingredients well and add a cup of water, reduce the heat and simmer on low heat for 10-15mins until thick.
4- Your basic sauce is ready! you can add any type ingredient to create your main dish, cooked chicken, meat or add mixed veg (potatoes,carrots green beans, cabbage or cauliflower etc)
5- once the main choice ingredient is added cook for further 20mins to ensure everything has cooked through.
5- Sprinkle finely chopped coriander leaves on top.


Advice :
If you have an allergy to coconut, try adding some fresh low fat yogurt (2-3 tbspn) instead and stir well.
Juice of a lemon or lime is also a great inclusion to this dish and gives it a zangy edge.
