Panna cotta with strawberry coulis

Ingredients :
500ml single cream
90g sugar
2 tablespoons orange flower water
2g agar agar
 
Recipe :
Pour the cream into a saucepan. Add the sugar.
Heat over a low heat, stirring from time to time. Add the orange flower water. As soon as it starts to simmer, add the agar agar, mix and leave to cook for 2 minutes, stirring constantly. Turn off the heat and leave to cool.

Pour the preparation into 4 small glasses and put in the fridge for 3 hours.

Meanwhile, hull, wash and cut the strawberries.
Put them in a wok with 200ml of water and 30g of sugar.
Leave to cook over a low heat until they become soft.
Drain them in a strainer. Blend them and refrigerate.

Shortly before serving, take the panna cottas out of the glasses and garnish with a spoonful of the stawberry coulis.
