Apricot crumble

Ingredients :
600g fresh apricots
60g brown sugar
8g vanilla-flavoured sugar
60g slightly salted butter
20g flour
1 handful of cereals (muesli, oat flakes, cornflakes)
1 handful of chopped hazelnuts
 
Recipe :
Lightly grease the base of a dish. Wash, de-stone and cut the apricots into 4. Put them in the dish. Sprinkle the chopped hazelnuts and vanilla sugar over the top.

Mix the caster sugar, soft butter, flour and cereals together. Crumble the mixture up in your hands then sprinkle over the fruit.

Cook in the overn at 200°C (Gas Mark 6-7) for about 30 minutes. Serve warm, possibly with vanilla ice-cream or vanilla-flavoured Chantilly cream.
