Tomato and goat's cheese tart |

Ingredients :
120g flaky pastry, or pastry case
500g tomatoes
2 onions
1 teaspoon olive oil
2 teaspoon parmesan
1 log goats' cheese
4 teaspoon herbes de provence, or mixed herbs
4 leaves fresh basil
Salt & pepper
Recipe :
Preheat oven to 220°C (425°F).
Peel and slice onions.
Peel and slice tomatoes, leave to strain.
Sauté onions in olive oil.
Add tomatoes, cook in same pan for a further 10 minutes.
If using bought pastry, roll out and prick with a fork.
Pour in tomato sauce, then add onions.
Sprinkle with herbs and parmesan.
Bake in oven for 35 minutes.
After 25 minutes, cut goats' cheese into quarters and arrange on the tart.
Decorate with basil leaves.
Advice :
Use more fresh basil for a basil salad, which will bring out the tomato in the tart, dress with olive oil and balsamic vinegar.

- Burgandy: Maçon, Saumur Champigny
- Rhône Valley: Tavel, côtes de Provence
