Prawn and pineapple kebabs |

Ingredients :
500g large prepared prawns
1 large pineapple, diced
Marinade :
150ml orange juice
1 tablespoon vinegar
1 tablespoon lime juice
1 teaspoon mustard
1 teaspoon brown sugar
Recipe :
Prepare the marinade.
Let the prawns marinate for at least 2 hours.
Skewer the prawns, alternating with chunks of pineapple, using about 4 or 5 pieces of pineapple for each skewer.
Mix the rest of the pineapple and any other ingredients left over in with the marinade.
Put mixture in a saucepan and let reduce over a medium heat for 10 or 15 minutes.
Grill or barbecue kebabs, serve with basmati rice and sauce, or salad.
