Grilled pineapple with vanilla sauce |

Ingredients :
1 large pineapple, chopped into rings of about 1cm
100g caster sugar
100g butter
Juice of 1 lemon
1 litre pineapple juice
300ml white rum
5 vanilla pods
Recipe :
Add 100ml water top the sugar and bring to boil. Leave boiling for 2 minutes.
Add pineapple juice and rum.
Stir well.
Leave simmering for 20 minutes.
In another pan, melt butter along with vanila seeds.
Stir two mixtures together and cook until you have a syrup.
Add lemon juice.
Remove from heat and keep by.
Grill or barbecue pineapple rings for 5 minutes on each side.
Serve immediately, with vanilla sauce.
Advice :
Lightly oil the pineapple before cooking, so they don't stick to the grill.
