Ingredients :
For four :
2 mint teabags, or 1 bunch fresh mint
Juice of 2 lemons
100ml gin
4 tablespoons caster sugar
4 slices lemon to decorate
Ice cubes
Recipe :
Steep teabags/mint in 300ml boiling water for 5 minutes, then remove bags or leaves.
Squeeze lemon, add to infusion, leave to cool.
Mix sugar and gin over ice, add mint infusion and stir well.
Taste and adjust lemon juice etc if necessary.
Serve chilled.
