Grapefruit terrine in tea sauce |

Ingredients :
320g orange juice
160g sugar
Zest of 1 orange
4 leave gelatine
8 grapefruit
25g pectin, or another gelling agent, available from leading supermarkets
Earl Grey tea
Recipe :
Allow 3 hours chilling time for this recipe.
Peel and quarter 6 grapefruit.
Tea Sauce:
Juice or squeeze 2 grapefruit, which should produce 1/2l juice.
Bring to the boil, then add pectin and 40g sugar and leave to infuse with 10g Earl Grey tea, for 3 minutes.
Sieve, then chill.
Orange Jelly:
Soak 4 leaves gelatine in iced water for 10 minutes.
Dry, then dissolve over a low heat, in 100ml orange juice, 100g caster sugar and zest of 1 orange.
Remove from heat and add gelatine.
Pass mixture through sieve, then chill to thicken.
In a large salad bowl, mix together orange jelly and grapefruit pieces, then place all in a terrine dish.
Thinly slice, serve with tea sauce.
