Ingredients :
150g beansprouts
10 little radishes
2 grapefruit
½ cucumber
½ pepper
1 hard-boiled egg
A few black olives
1 shallots
A few sprigs chives
1 tbsp olive oil
Mustard, vinegar, salt and pepper
Recipe :
Chop the grapefruit in two and scoop out the fruit. Squeeze the juice out and set aside. Wash and chop the radishes into pieces, peel and dice the cucumber and chop the pepper into thin slices.
Drain the beansprouts. Mix the chives and crushed egg white. Mix the egg yolk, mustard, chopped shallot, olive oil, a little vinegar and mustard, grapefruit juice, salt and pepper in a container.
Mix the bowl of vegetables, egg white, dressing and grapefruit and serve garnished with olives.
