Apple pie

Ingredients :
1,5 kg apples
80g caster sugar + 20g
160g flour
2 vanilla sugar or 2 teaspoons vanilla essence
2 egg yolks
2 tablespoons milk
150g butter
2 teaspoons cinnamon
salt

 
Recipe :
Make pastry:
Sieve the flour into a large bowl.
Add the sugar, 120g butter cut into small pieces, egg yolk and a pinch of salt.
Rub in fat (do not knead) until mixture has consistency of breadcrumbs, make a well in the middle and pour in milk. Mix in, then make pastry into a ball and leave to rest for an hour and a half in the fridge.

Preheat oven to 350°F (180°C).
Peel the apples, core them and cut into 4 or 6; depending on size.
Dust with vanilla sugar, or sprinkle with vanilla essence and add rest of butter.
Roll out pastry, line bottom of tart or flan dish thinly.
Arrange the apple on the pastry.
Roll out the rest of the pastry and put on apples to make top of pie, making sure the seal the edges carefully. Brush edges with egg yolk all way round.
Make a short cylinder out of stiff paper and place in middle of pie.
Cook in oven for 40 minutes.
Serve warm, dusted with icing sugar.




Advice :
Try serving with a scoop of vanilla ice cream, crème fraiche or custard.
If you have any pastry left over,use it to decorate your pie by cutting out leaves or apples shapes.
