Wash, peel and seed tomtoes, then cut into quarters.
Peel and slice onions and garlic.
Brown the onion with a couple of chunks of tomato instead of butter or oil.
Add stock and rest of tomatoes.
Cook for 25 minutes, then blend.
Add parsely and mint leaves, as well as garlic.
Serve.
