Red fruit compote

Ingredients :
500g red fruit (a mixture of your choice: redcurrants, cherries, raspberries, strawberries...)
500ml water (or juice if your fruit are preserved)
The zest of 1/2 a lemon
1 cinnamon stick
2 cloves
Honey
4 tsp crème fraiche
 
Recipe :
1 - Stone and husk your fruit, rinse under running water and drain.
2 - In a large saucepan, heat the juice/water with the lemon zest, cinnamon and cloves and simmer for 10 minutes, removing the cloves and cinnamon afterwards.
3 - Add the fruit and cook for a futher 3-10 minutes, until soft.
4 - Allow the mixture to cool, add honey to taste and pour into individaul glasses or bowls.
5 - Refrigerate for 2 hours before serving with a dollop of crème fraiche on top.




Advice :
Frozen, mixed berries can be used for this recipe, there is no need to defrost them beforehand. This recipe is a wonderful alternative at Christmas, with its festive red colour.
