Ingredients :
8 red mullets, fillets if possible
100g tapenade
16 fresh basil leaves
3 tablespoons olive oil
Juice of one lemon
Recipe :
Preheat oven to 300°F (150°C).
Rinse and dry fish. If not using fillets, gut and prepare them.
Split each fish lengthways, then spread a teaspoon of tapenade inside each one. Add a few basil leaves.
Sprinkle liberally with olive oil and bake in foil parcel for 10-15 minutes.
Serve with couscous and steamed vegetables.
Advice :
Try a rosé wine with baked fish.
