Goose with chestnuts

Ingredients :
1 goose (3 kg)
1 kg chestnuts, smashed
9 small cooking apples, cored
300g sausage meat
1 egg
2 shallots, finely chopped
40g butter
50g sugar
salt and freshly ground black pepper
 
Recipe :
Preheat the oven to 180°C (gas mark 6).

1- Prepare a stuffing with the sausage meat, shallots and one apple (peeled and chopped). Add 850g of chestnuts, the egg and seasoning. Mix well.
2- Stuff and truss the bird, making sure you seal the cavity.
3- Smear half of the butter over the bird and cook in the oven for 1h45, basting regularly.
4- Mix the remaining 150g chestnuts with the butter and sugar. Use this mixture to stuff the apples.
5- Put the apples in the oven 20 minutes before the end of cooking time.



Advice :
If you can, use canadian cooking apples for this recipe, they are an ideal size for individual servings.
