Citrus fruit with meringue |

Ingredients :
1 grapefruit
2 oranges
2 clementines
1 lime
2 teaspoons grated ginger
2 tablepoons sugar
2 tablespoons icing sugar
1 egg white
Recipe :
Peal and remove pith of grapefruit, oranges and clementines.
Separate segments.
Put all in a large bowl.
Sprinkle with sugar and ginger, chill for at least an hour.
Arrange fruit on four dessert plates.
Zest and juice lime.
Put egg whites and icing sugar in a bowl, together with a teaspoon lime juice and half of the lime zest.
Put mixture in a bain marie (bowl over boiling water), whisk until you have a meringue consistency.
Put a tablespoon of meringue on each plate of fruit and grill for 3 to 5 minutes.
Serve.
