Ingredients :
1 ready-made savoury pastry case
12 onions
5 eggs
1 small pot reduced-fat cream
200g grated cheese
Olive oil
Salt & pepper
Recipe :
1. Pre-cook the pastry case in a flan dish for 10 minutes at 450°F (235°C).
2. Peel and slice onions.
3. Heat 2 tablespoon oil in a frying pan at medium heat.
4. Add the onions and sauté for 10 minutes, until translucent.
5. Beat the eggs.
6. Add salt, pepper, crème fraîche and grated cheese.
7. Mix with onions.
8. Cover pastry case with mixture and cook in a very hot oven for 25 minutes, then at 400°F (205°C) for a further 15 minutes.
9. Serve hot or cold.
Advice :
Experiment with the recipe, try replacing the onions with sliced leeks, boiled in salt, pepper and chicken stock.
Recommended wines: Rosé de Provence, Maçon, Saint Véran
