Genoa cake

Ingredients :
150g sugar
125g butter
100g almonds
40g flour
3 eggs
1 pinch salt
1 glass Kirsch
 
Recipe :
Finely chop the almonds and mix with half of the sugar.
Cream together softened butter and rest of sugar.
Once ingredients combined, add almond mixture and eggs, one by one.
Whisk.
Add a pinch of salt, flour and Kirsch.
Grease a cake tin and pour in mixture.
Cook for 40 minutes at 300°F (150°C).


Advice :
Use powdered almonds to save time.
Try adding candied peel and glacé cherries, then decorating the top of the cake with almonds just before serving.
This is a great recipe to make the night before.
