Fennel with grapefruit |

Ingredients :
4 grapefruit
3 heads fennel
6 tablespoons olive oil
Juice of 1/2 lemon
Grapefruit juice
Salt & black pepper
Recipe :
Peel grapfruit in a bowl, to retain juice. Separate into segments.
Wash and slice fennel thinly, keeping a few leaves back for decoration.
Take 4 plates and arrange grapefruit and fennel together.
Make a dressing, using 6 tablespoons olive oil, lemon juice and juice saved from the grapefruit. Season.
Drizzle sauce over each plate, leave to chill for 3 hours.
Decorate just before serving.
Advice :
Try adding prawns to this dish, sauted or marinated in a little olive oil, lemon juice and garlic.

- Bordeaux: St Emilion
- Burgandy: Maçon, Saumur Champigny
- Rhône Valley: Tavel, Côtes de Provence
