Ingredients :
3 large mackerel fillets
100g flour
1 glass oil
125g mushrooms
1 large onion
6 shallots
1 clove garlic
2 tablespoons vinegar
2 tomatoes
2 teaspoon parsley
1 teaspoon salt
Recipe :
Season and flour the fish and fry in very hot oil.
Put on a serving plate and pour rest of frying oil over fish.
Using the same pan, fry chopped onion, shallots, garlic and mushrooms in a little more oil.
Brown vegetables and add to fish.
Pour warm vinegar all over fish and arrange tomatoes around.
Sprinkle with parsley and serve immediately.

- Alsace : Silvaner, Pinot blanc
- Bordeaux : Entre 2 mers
- Bourgogne : Maçon, St Véran
- Loire : Sancerre, Pouilly
