Tarte au Citron (Lemon Tart) |

Ingredients :
Base :
140g flour
140g melted butter
40g powdered almonds
40g sugar
Filling :
150g sugar
150g butter
100g powdered almonds
3 eggs
2 lemons
Recipe :
Make base :
1. Mix ingredients in a large bowl and roll into a ball.
2. Roll pastry out onto a floured surface, then line greased flan dish.
3. Chill for at least an hour.
4. Precook base for 15 minutes at 230°C (Gas 8).
Make filling :
5. Whsk eggs with sugar, zest of 2 lemons and juice of 1/2 lemon.
6. Add melted butter and juice of seond another 1/2 lemon.
7. Pour into base.
8. Bake for at least 30 minutes.
9. Sprinkle with icing sugar, serve.
Advice :
If you or your guests like meringue, try this :
Beat two egg whites until very stiff.
Carefully stir in 100g sugar and a pinch of salt.
Once tart is cooked, cover with mixture.
Put back in oven at a low heat until meringue is cooked.
