Pissaladière

Ingredients :
500g flour
15g bewer's yeast
1 teaspoon salt
550ml warm water
50ml olive oil
100g fresh black olives
150g anchovies
onions
 
Recipe :
Rising time: 2hrs 15mins

Sieve yeast, add a little warm water and leave for 5 minutes.
Make a well in a large bowl with flour, add warm water, olive oil and salt.
Mix ingredients, then knead until you have a supple dough.
Roll into a ball, cover with a clean tea towel and leave in a warm place, to rise for two hours.

Knead dough for a couple of minutes.
Split into four and leave to rest for a further 15 minutes.
Roll dough into a circle, roughly half a cm thick, then sprinkle with olives and anchovies.

Place on a lightly-oiled oven tray and cook for 15 mins in an oven pre-heated to 190°C.
