Recipe :
Spread the pizza base with olive oil.
Peel & seed the tomatoes, then dice or cook into a puree. Spread or sprinkle over olive oil.
Cut cheese into small pieces and arrange on pizza, followed by anchovies.
Season, then drizzle a little more olive oil.
Sprinkle with oregano.
Cook in an oven preheated to 350°F (180°C) for 25 minutes.
Advice :
If mozzarella is too creamy for you, try replacing it with grated gruyere or cheddar...
Try adding olives to bring out the flavour of the fish.
