Cod and garlic fritters

Ingredients :
750g dried cod, soaked for 24 hours in cold water
100g flour
Salt & black pepper
1 tablespoon olive oil
150ml hot water
1 egg white
Olive oil for frying
Slices of lemon

To make Skorthalia :
4 slices white bread, with crusts removed
6 cloves garlic, crushed
150ml olive oil
Juice of 1 lemon

 
Recipe :
To make Skorthalia :

Put the bread in a blender for 1 minute to make breadcrumbs.
Soak breadcrumbs in 400ml water for 5 minutes.
Add garlic, salt and fresh black pepper and mix thoroughly.
Add the olive oil, little by litte, until the mixture is smooth.
Put in a bowl to one side.

To make Cod Fritters :

Bone the dried fish and cut into 5cm slices.

Make batter: Sieve flour into a large bowl, followed by salt and pepper. Add olive oil and stir carefully, until it is evenly mixed.
Leave to rest at room temperature for an hour.
In another bowl, beat the egg white and add to the batter.

Dunk each piece of fish in batter, then fry in boiling oil for 7 minutes.
Remove from oil with a skimmer and blot on paper towels.
Serve with Skorthalia and slices of lemon.
