Ingredients :
1 pineapple
3 eggs
100g sugar
50g flour
Recipe :
Peel and core pineapple, cut flesh into cubes and juice or blend in a food processor to make a puree.
Separate the eggs.
Mix egg yolks with sugar and flour, then add pineapple puree.
Put mixture in a pan and leave to thicken over a low heat, stirring constantly. Remove from heat just before boiling and leav to cool.
Beat egg whites until stiff, then add to mousse. Chill for at least 3 hours before serving.
