Artichokes alla romana

Ingredients :
8 artichokes
1/2 cup of water
1/2 cup of oil
Garlic
Parsley
Salt & pepper
 
Recipe :
Remove any hard leaves from around the artichoke.
Top and tail, wash and peel.
Make a cut in the top of each leaf, pull apart a little and put a little garlic and parsley in cut.
Put the artichoke head-down in a pressure cooker, add water and oil, then season.
Close the cooker and cook over a high heat for a few minutes, then turn heat down and leave to cook for 12 to 14 minutes.
If you end up with too much sauce, leave the cooker open to reduce.
Serve with sauce.

Can be eaten hot or cold.
