Chicken with oranges and ginger |

Ingredients :
4 organic chicken breast
2 lemons
1 1/2 oranges
2 teaspoons grated ginger root
2 onions
1 teaspoon cayenne pepper
1 clove garlic
Salt & pepper
Recipe :
Allow 12 hours' chilling time for this recipe
Arrange chicken in large dish, crush garlic and rub on meat.
Wash fruit, then juice or squeeze the orange and one lemon.
Mix juices together, then pour over meat.
Slice the second lemon and place on chicken breasts.
Sprinkle with a teaspoon ginger, season and chill for 12 hours, turning chicken from time to time.
After marination, remove lemon slices and saute in a non-stick frying pan.
Lightly grill chicken, turning from time to time and drizzling with marinade.
Peel and slice onions, put in a bowl with the second teaspoon ginger, cayenne pepper, lemon juice and sliced half orange.
Serve chicken once golden, with basmati rice, ginger sauce and lemon and orange slices.
Advice :
Try adding a few coriander seeds to the marinade for extra flavour.
