Pear and parmesan tart

Ingredients :
5 Conference pears
6 teaspoons sugar
5 teaspoons butter
60g grated parmesan
1 packet puff pastry
 
Recipe :
Peel and core pears, then slice and arrange in a star shape in the bottom of a greased oven dish.
Put oven dish on hob over a low heat, then sprinkle with 5 or 6 heaped tablepsoons of sugar.
Leave to simmer until you have a clear caramel. You should not need to stir at all, as if you arrange the fruit in a star shape, the juice will drain off the fruit and mix with the sugar.
Remove from heat, season.
Add cheese.
Leave off heat for 20 minutes.
Cover with a sheet of pastry, making sure you tuck the edges in between the fruit and the side of the dish.
Cook at the bottom of an oven preheated to 325°F (180°C) for a good half-hour.
Turn out onto a Serving plate immediately after you have taken the tart out of the oven.
Serve warm, or in the unlikely event that there is any left, cold...
