Chocolate and almond pudding |

Ingredients :
4 eggs
250ml skimmed milk
4 tablespoons low-fat creme fraiche
4 teaspoons sugar and 3 teaspoons sweetener
2 tablespoons bitter almond extract
40g chopped flaked almonds
20g grated chocolate (at least 70% cacao solids is best)
Recipe :
Preheat oven to 200°C (Gas Mark 6/7).
Mix all ingredients together, adding chocolate last.
Stir until you have a smooth paste.
Pour into a large pudding dish or individual ramekins.
Cook in a bain-marie for 30/35 minutes.
Leave to cool and serve, or serve hot with custard.
