Sardine and spinach gratin

Ingredients :
480g fresh sardines
2 large red onions
1 tin spinach or large handful fresh spinach
1 lemon
2 teaspoons fennel powder
1 tablespoon wine vinegar
4 teaspoons oil
2 teaspoons margarine
Salt & pepper
 
Recipe :
Preheat oven to 400°F (210°C).
Wash and gut fish, remove head, tail and bones. Rub with kitchen paper to remove scales.
Peel and slice onions.
Sprinkle onions in the bottom of an oven dish, then arrange sardines on top. Season.
Mix together oil and vinegar in a separate bowl and pour over sardines. Sprinkle with fennel.
Bake for 20 minutes, using cooking juices to keep moist.
Blanch or steam spinach, then chop and very gently saute in margarine for 5 minutes.
Serve sardines with spinach.
