Anchovy paste

Ingredients :
18 fresh anchovy fillets
4 tablespoon olive oil
1 tablespoon wine vinegar
1 clove garlic
Pepper
 
Recipe :
Blend anchovies in a food processor.
Peel and crush garlic, then mix with vinegar and pepper.
Stir in oil little by little while whisking mixture, as if making a mayonnaise.
Add anchovies.
Serve as a dip with crudités, or with toast.



Advice :
Anchovy paste makes great party food and goes well with cocktails, sparkling white wines and pastis.
