Spicy mediterranean salad with mint

Ingredients :
4 good-sized tomatoes
1 green pepper
1 cucumber
1 onion
3 cloves garlic
1 bunch fresh mint

For the sauce:
Juice of 1 lemon
2 tablespoons extra virgin olive oil
1 pinch cayenne pepper
1 pinch Moroccan Seasoning (Ras el Hanout), harissa or chilli powder will substitute if not available
Salt & pepper

 
Recipe :
Wash but do not peel pepper, remove seeds and dice.
Wash and peel cucumber, cut into four lengthways, then dice to about half a centimetre.
Peel and chop onion, then peel and crush garlic.
Wash and carefully dry mint, keep a few leaves to one side for decoration.
Mix all ingredients together in a salad bowl, drizzle olive oil and lemon juice, then toss carefully.
Sprinkle with cayenne pepper and Moroccan Seasoning, season and chill for at least an hour.
Decorate with mint leaves and serve.
