Ingredients :
Serves 4.
500g skinless chicken breast
1½ tablespoons peanut oil
3 tablespoons chopped garlic
1 tablespoon fresh ginger, finely chopped
50ml chicken stock or water
1 tabelspoon soy sauce
2 teaspoons sugar
2 teaspoons chilli sauce (try Asian supermarkets such as Wing Yip)
2 teaspoons sesame oil
1 handful fresh basil leaves, whole
Recipe :
1.Slice chicken into strips of about 1x4cm.
2.Peel and chop garlic and ginger.
3.Remove basil leaves from stalks, but do not chop.
4.Heat a wok until very hot, then add oil.
5.Once oil is smoking, add garlic and ginger.
6.Saute for 20 secondes.
7.Add chicken.
8.Saute for 2 minutes, stirring constantly.
9.Add stock, soy sauce and chilli sauce.
10.Stir well, bring to the boil and cook at a low heat for 5 minutes.
11.Stir in sesame oil.
12.Add basil, stirring carefully.
13.Serve immediately, with rice or noodles.
