Ingredients :
For chocolate sauce:

6 slices candied orange
100gr sugar
50gr cocoa powder
100ml creme fraiche

For souffles:

4 eggs
100gr dar chocolate (at least 75% cocoa solids is best)
60gr butter
30gr cocoa powder
100gr icing sugar
 
Recipe :
To Make Chocolate Sauce:

Mix chocolate and sugar together in a pan over a gentle heat, add cream fraiche little by little, whilst stirring constantly.
Leave to cook until reduced by half.


To Make Souffles:
Preheat oven to 375°F (190°C).
Melt chocolate gently in a bain marie (bowl over boiling water), add butter, then egg yolks.
Whip egg whites until stiff, then add sugar whilst still whipping.
Gently add white to chocolate mixture, little by little.
Grease 6 ramekins, then three-quarters fill each one.
Cook for 8 - 10 minutes in the middle of a medium oven. Do not open the door!
Decorate with strips of candied orange, and dust with icing sugar, before serving.
