Crêpes flambéed in Cointreau |

Ingredients :
Makes 18 crêpes (6 servings)
For the Batter :
250g flour
½ litre of milk
3 eggs
30g melted butter
1 tsp oil
20g melted butter
3 tsp Cointreau
1 pinch of salt
for the Garnish :
3 oranges
the zest of 1 orange
20g butter
1 tsp sugar
1 tsp Cointreau
To Flambée :
1 dl Cointreau
Recipe :
1 - Sieve the flour and salt into a bowl and make a well inthe middle. Add the beaten egg and a little milk. Beat into a smooth, lump-free mixture. Gradually incorporate the rest of the milk. Allow to stand at room temperature for 1-2 hours.
2 - When you are ready to make your pancakes, add teh melted butter, oil and cointreau to the batter.
3 - Heat a frying pan with a little oil/butter and make your pancakes, as thin as possible. Keep warm in the oven.
4 - Peel the oranges and segment, using a knife.
5 - In a saucepan, melt the butter, add the orange segments and zest. Sprinkle with the sugar and heat vigarously. Add the cointreau.
6 - Place 2-3 orange segments in the middle of each pancake and roll into cigars. Place back int he saucpan, add the cointreau and flambée
7 - Serve.
