Ingredients (serves 6) 4 small baking potatoes 8 slices of emental cheese 4 slices of gorgonzola cheese 1/2 red onion, sliced 4 sprigs of rosemary butter Method: Pre heat the 200oC / 180oC Fan / gas mark 3 Scrub the potatoes under the tap. Stab the potato with a fork and then rub with olive oil. Sprinkle with fresh ground rock salt. Bake the potatoes until the skin is crispy. Once cooked, cut into the potatoes on one side and add the butter. Pile on a generous slice or two of each cheese and top with a slice of red onion and sprig of rosemary. Season and serve immediately. | |||||||||
